I don’t seasonaly discriminate when it comes to desserts, I’m happy to have apple pie all year round. Not just when it’s freezing outside and an icy draft is sneaking in under the doors of our home.
I love a good pie that’s crammed in with so much golden stewed fruit that it overflows out when you cut the first piece. I don’t often take the time to make the dough from scratch but it’s the only way to get a thick buttery crust that I love.
Here is a deep dish apple cinnamon pie that I think is just as good in Spring as it is in Winter, albeit the ice cream melts very very fast. My only variation is that I always use brown sugar for extra caramelised fruity goodness.
